What’s your go-to dish for a cosy night in, and why?
My go-to dish would have to be a tomato and mascarpone spaghetti with bacon and mushrooms. It’s a really simple but tasty meal that the whole family loves. It’s minimal clean up and hits the spot.
What’s your favourite comfort food memory?
Growing up in Hong Kong there were so many options available it’s hard to choose just one item. After school, I would head off into town with my friends and grab some food at the street vendors. Cheung Fun was a staple, it’s a rolled up rice noodle served with hoisin sauce, light soy sauce, peanut butter sauce, and chilli oil. We also sometimes got curried fish balls, Siu Mai, Hainanese Chicken rice or fried beef noodles, but always shared with friends.
What’s your guilty-pleasure treat?
Currently the Chocolate Malt balls from M&S are so moreish. They don’t last very long in our house.
What’s your perfect accompaniment: a drink, side, sauce or something to watch?
With the weather being so hot, and my addiction to coffee, I have to say it’s got to be an iced coffee. I use whole milk and light muscovado sugar to sweeten mine to give it that hint of caramel/butterscotch flavouring.
