This rich lamb curry is slow-cooked with layers of flavour that build from the very start — caramelised onions, ginger, garlic and warming spices. The meat is coated in a thick, fragrant sauce that deepens as it simmers, leaving the lamb tender and full of warmth. Finished with a scatter of fresh coriander, it’s the kind of dish best enjoyed gathered round the table with chapatis or a bowl of pilau rice, perfect for sharing on a Sunday or whenever comfort is needed.
