The Bunkers

This is a cocktail dedicated to the air raid shelters that are located next to the Walled Garden. The bunkers were built during World War II to accommodate the likes of Sir Winston Churchill when he frequented the property. With Johnnie Walker whisky, honey Scotch liqueur and smoke bitters, the cocktail is our twist on the Old Fashioned, whilst paying homage to our wartime prime minister, combining his love of both whisky and cigars.

Cocktail Method

  1. Take a chilled tumbler and fill it with ice.
  2. Pour in the whiskey, Drambuie and honey Scotch liqueur and stir until combined, then add the dashes of bitters.
  3. Set alight the cinnamon bark for a few seconds and then when cooled, pop it in the glass to garnish.

Project X 

Project X was the wartime code name for The Grove. In 1939 the estate accommodated 3000 government employees who moved out of London to avoid the German bombing raids. While at The Grove these residents became self-sufficient utilising the land to cultivate their own vegetables. This cocktail is a take on a Bloody Mary, using bacon-infused vodka, dry sherry and Walled Garden tomatoes.

Cocktail Method

  1. Add all of the ingredients into a cocktail shaker with ice, give it a good shake and then strain into a tall glass, adding the celery stick to garnish.

Horse Shoe

This seasonal cocktail bursts with flavours of peach, agave, citrus, and Herradura ‘Horse Shoe’ tequila, and is a tribute to the stables that were once in use here during the 18th century.

  1. Pour all of the ingredients into a cocktail shaker with ice, give it a good shake and then strain into a tall glass.
