For the crispy rice layer

Viral Dubai Chocolate Bar


  1. Melt the dark chocolate and pour into the base of a chocolate bar mould. Allow it to harden.
  2. Melt the marshmallows and spread it on top of the chocolate base.
  3. To make the caramel, combine the sugar, condensed milk, cream and vanilla extract in a saucepan. Bring to the boil, stirring constantly.
  4. Add the glucose syrup and continue cooking over a medium heat and stirring, until the mixture reaches 110ºC. Add 2g of butter.
  5. Keep stirring until the mixture reaches 115ºC. Then, remove from the heat and when the caramel has cooled down, pour it on top of the marshmallow.
  6. To make the crispy rice layer, combine the melted white chocolate and 8g of melted butter, then fold in the Rice Krispies.
  7. Spread a thin layer of the mixture between two sheets of baking paper and use a rolling pin to spread the mixture until it is around 9mm thick.
  8. Allow it to set completely then cut the size needed to fit the chocolate bar mould. Place this on top of the caramel layer.
  9. To complete your Dubai chocolate bar, coat the crispy rice layer with the remaining melted dark chocolate until it is covered.
  10. When the chocolate begins to set, use a paper cone to pipe dark chocolate lines diagonally across each bar.
  11. Enjoy!
