Which seasonal flavours are you most excited to cook with this year?
I love spicy pears with cinnamon sticks, whole cloves, nutmeg, cardamom, vanilla, ginger, and a bit of citrus. It’s the same flavour profile I love in mulled wine – warming, rich, and festive.
What is your favourite recipe that you’ve cooked recently?
Brussel sprouts with crispy pancetta. It’s such a classic combination, but it always feels special at this time of year.
