As autumn arrives, it’s time to start cooking warm and wholesome dishes, and this Masala chicken from Madhu’s is the perfect meal to embrace the new season.




  1. In a pan, heat ghee or 100g butter and then add the onion paste.
  2. Once the onion paste has browned, add the ginger and garlic paste and cook until the mixture is dark brown. Then, add the blended tomatoes.
  3. Add the green chilli paste, turmeric and chilli powder.
  4. Wait until the oil has separated from mixture and ensure that you are constantly stirring so that the mixture doesn’t burn.
  5. Add the chicken and stir, and then add the salt.
  6. Cook for 10-12 minutes until chicken is cooked.
  7. Stir in the garam masala and keep cooking until the chicken is cooked throughout.
  8. Garnish with some chopped coriander.
  9. Serve with rice.
