Veggie BBQ Recipes from Jimmy Garcia

From 14 July, pop-up legend Jimmy Garcia will be back at The Grove, bringing his BBQ club to the stunning surroundings of our Walled Garden. Ahead of this, Jimmy has shared 3 inventive, vegetarian BBQ recipes to inspire you for your next garden party!

Jimmy Garcia Vegetarian BBQ recipe

Ingredients

Smoked almond dukkah

Method

  1. Place the peach wedges flesh side down on the BBQ for 2 minutes until blistered
  2. Place the samphire on the BBQ for one minute to soften
  3. Make your smoked almond dukkah by adding the smoked almonds, sesame, coriander, cumin, fennel seeds and sumac to a frying pan and toasting until golden and fragrant
  4. Transfer from the pan to a pestle and mortar and grind, but not to a powder; allow some texture
  5. Plate up the peaches, peas, samphire and smoked almond dukkah and enjoy!

 

BBQ Asparagus, Poached Eggs and Brown Butter Panko

Ingredients

Method

  1. Place a frying pan on medium heat and add butter and olive oil.
  2. Add breadcrumbs and fry until golden brown and they have soaked up much of the butter
  3. Blister the asparagus on the BBQ for 2 minutes each side and season with sea salt
  4. Serve with a poached egg and you have the perfect BBQ brunch dish!

 

Smoked Mango, Coconut Eton Mess with Fresh Passionfruit, Rum and Lime

Smoked Mango

Ingredients

Vanilla cream

Rum and Lime syrup

Spiced sugar (either buy or make your own with the below ingredients)

Toasted coconut

 

Method

  1. Whip the double cream, fresh vanilla and caster sugar until soft peaks form
  2. Squeeze over fresh passion fruit
  3. Make the rum and lime syrup by adding the spiced rum, sugar, inverted sugar, lime zest and juice to a pan and boil for 3-5 minutes on high heat until it holds on the spoon
  4. Halve the mango and dust in the spiced sugar
  5. Smoke the mango skin side down on the BBQ for 4-6 minutes until soft
  6. Plate up the mango and cream, drizzle with the syrup and top with toasted coconut. For presentation points, decorate with edible flowers!
