Summer in a glass: cocktail recipes straight from our estate

If you’ve popped into The Stables, you may recognise Matthew Bolam. After joining the team in January 2020 as our Head Bartender, he was promoted to F&B Supervisor at the beginning of this summer. We popped over to Jemima’s Kitchen Garden and found Matt picking ingredients destined for your cocktail glass.
As part of our garden-to-glass ethos, our bar tenders head over to Jemima’s Garden Kitchen every day. It is here, nestled inside the Walled Garden, that seasonal produce is hand-picked and later used to create perfect garnishes and flavourful cocktails.
In the spirit of summer, Matt has shared his favourite two recipes for the perfect summer tipple.
Lemon Alone
First up is a The Glasshouse Bar favourite: the Lemon Alone. A refreshing rum-based cocktail served over ice with, you guessed it, plenty of lemon flavour. One of the main ingredients to create the fresh lemon taste is Lemon Verbena, a plant native to South America. We then garnish with Lemon Thyme which offers a sweet, refreshing finish to the drink.
To make at home, you’ll need:
- 50ml Pampero rum (house white rum)
- 30ml lemon thyme syrup (homemade using lemon thyme from WG)
- 25ml lemon juice
- Soda
- Lemon wheel
- Lemon Thyme sprigs
- Lemon Verbena
Method:
- Pour rum, syrup, lemon juice into highball glass, top with crushed ice
- Dress with lemon thyme and 1 lemon moon in middle of glass
- Add more crushed ice and top with soda water
- Garnish with thyme sprigs or verbena
Hugo Spritz
Now time for the Hugo Spritz: With the choice of Moroccan Mint, Pineapple Mint and Apple Mint found in the garden, Matt chooses Apple Mint as the perfect partner for The Stables’ Hugo Spritz. Paired with elderflower, lime, Prosecco and soda, this light cocktail will have you wanting another in no time.
To make at home, you’ll need:
- 15ml Elderflower St Germain Liqueur
- 4 lime wedges
- 6-8 mint leaves
- 75ml prosecco
- Soda top
Method:
- Place cubed ice into a wine glass
- Add mint, limes and St Germain to the glass
- Add prosecco and top with soda
- Garnish with preferred mint
