Walled Garden Jerusalem Artichoke Soup

During the autumn and winter months, our resident gardeners spend time harvesting fresh veggies and herbs for all of our guests to enjoy. Jerusalem artichokes are just one of the many fresh ingredients that are picked straight from the kitchen garden and produce the most flavoursome soup. The artichoke itself has a very nutty, yet sweet flavour which is perfectly balanced by fine slithers of shallots and peppery rocket. Completing the dish is a mouth watering truffle oil which offers a rich aroma – it’ll really tickle the senses!
Cassoulet of Chicken
with Toulouse Sausage, pork belly, haricot beans, flat leaf parsley and garlic crumbs
One of the heartiest dishes on the menu is the Cassoulet, created with the finest Toulouse sausages. They are made in The Stables’ kitchen from a bespoke recipe our Head Chef developed after an inspirational culinary tour of the French city itself. The addition of British chicken and pork gives the slowly braised dish both a rich and warming flavour – perfect for these cold, wintery days!
Tom and Jerry Crème Brûlée

The talented pastry team have created an exciting and flavoursome take on the traditional crème brûlée. A delectable combination of rum, brandy and aromatic spices, the Tom and Jerry Crème Brûlée is the perfect dish to end a heartwarming evening.
